The Olympics are over, and I’m a little bummed. I’ll get over it quickly, but there’s one thing I’m really going to miss: showing our daughter women’s sports.

Our kiddo loves watching sports, but the first words out of her mouth are always, “Are they boys or girls?” She wants the girls every time. This becomes a bit of a challenge during the regular NFL or NHL season. We simply can’t stream women’s teams on demand. She’ll settle for watching the men, but there’s always this tiny, unmistakable harrumph to her shoulders.

That was never the case during the Olympics. We could always find a women’s event to put on. Any country, any sport. She didn’t care about the rules or the standings. She just wanted to watch the women be absolute badasses.

And, honestly, that makes me feel pretty great about my parenting.

  • This week, our fridge had some leftover chopped celery, grapes, and an apple. When I popped those ingredients into my Evernote, chickpea Waldorf salad came up as a meal option. I chose to toss that together as my lunch meal prep. Your supposed to serve this over a bed of spinach but I had so much celery in there I skipped that part. [The Kitchn]
  • When I decided to make bruschetta pasta, I drastically underestimated just how much this would taste like bruschetta. It was fantastic! Tomatoey and garlicky in all the best ways. Your supposed to serve this room temp or chilled but we ate it warm. It still works. I found this to be a refreshing bite of summer in the dead of winter. [Budget Bytes]
  • I'm trying to be more cognizant about adding seafood to our meals - beyond my old standby of shrimp. Our schedule went a bit awry the night I went to make sheet pan lemon-garlic cod with roasted vegetables. I was cooking from my brief memory of the recipe. I ended up forgetting the lemon. So, overall, this was good but not great. I also cooked the veggies and fish on separate sheet pans. We ate all the fish but have a ton of veggies leftover. I might top them with a fried egg and call it breakfast. [Eating Well]
